#FeedingMen | Beach Camping + Churro S'mores

We are beach camping this week.  We have been invited to join a great group of families have have been camping together near Carlsbad, California for a couple of summers now.  My boys have been waiting for 6 months since campsite registration day for this fun.   We have been promised non-stop boogie boarding, friends, late-nights, scooter races, the works.

This is an RV camping situation so I am in luck for making and keeping food safe and fresh for my family.   I am worried about pulling it off though in a timely manner.   I hope I'm not trying to stoke a fire for an hour with smoke in my eyes and bugs in my hair.   I am prepping my food in advance so that I can be ready and happy.  I am also telling myself that it will all be ok if it doesn't go the way I want.

I really want to make the Churro S'mores for my dessert on the night I am cooking.   I haven't ever seen a more delicious looking s'mores recipe.   It maybe that we go with the graham + marshmallow + Hershey's but it is ok to have camping food goals.


Churro S'mores

Churro Cookies (recipe to follow)
Spicy Chocolate Sauce (recipe to follow)
Marshmallows

To assemble s'mores, roast marshmallows over open fire until soft and slightly charred. Place on top of a churro cookie and pour melted chocolate sauce over. Top with another churro cookie if desired. Serve with plenty of napkins nearby.

Churro Cookies
1 cup water
5 tbsp butter
2 tbsp brown sugar
½ tsp salt
1 cup all-purpose flour
2 eggs
½ tsp vanilla extract
¼ cup sugar
1 tsp cinnamon

Preheat oven to 425. In a bowl or dish, mix together ¼ sugar and 1 tsp cinnamon. Set aside. In a large saucepan, combine water, butter, brown sugar and salt. Bring to a boil. Remove from heat and mix in flour. Once combined, add the eggs one at a time, mixing well. Add vanilla and combine. Allow to cool slightly, and then transfer mixture to a piping bag fitted with a small star tip. On a baking tray lined with parchment paper, pipe the dough into small discs by using a spiraling motion. Repeat until you have 16-18 cookies, and bake for 15 minutes, or until just browned. While still warm, individually coat the cookies in the cinnamon-sugar mixture. Serve immediately.

Spicy Chocolate Sauce
½ cup heavy cream
¾ cup dark chocolate, chopped
½ tsp ancho chili powder
½ tsp vanilla extract
¼ tsp cinnamon

In a bowl, mix together chocolate, ancho, vanilla and cinnamon. Set aside. In a small saucepan, heat the heavy cream over medium heat. Once it begins to boil, remove from heat and pour over the chocolate mixture. Let stand for about one minute and then whisk until entirely smooth.
